Crust-less Apple Pie |  Vegetable Day

A bit tart, a bit sweet, this dessert is a great way to finish off your BBQ, picnic or any meal.

Makes 2 servings - uses 1 cup of your daily fruit allowance

Ingredients
  • 2 Granny Smith apples
  • PAM or other zero-calorie cooking spray
  • Splenda or other zero-calorie sweetener, to taste
  • Apple pie spice, to taste
Directions
  • Preheat oven to 425°F.
  • Slice 2 Granny Smith apples into 1/4" thick slices.
  • Spray the bottom of a glass casserole dish with cooking spray.
  • Spread the apple slices over the bottom of the dish in a decorative manner.
  • Sprinkle them with sweetener, then sprinkle them with apple pie spice.
  • Place another layer of apples and repeat the sprinkling.
  • Bake in the oven until the apples are tender and start to brown.
  • Let it cool a bit before serving.
  • Enjoy!
