Palmini Lasagna |  Vegetable/Fruit Day

Ingredients
  • Palmini Lasagna Sheets or any other hearts of palm pasta sheets
  • 1 medium eggplant
  • Diced vegetables, to personal taste
  • 1 bag baby spinach
  • Tomato or sugar free marinara sauce, our favorite is Rao's Marinara Sauce
Directions
  • Preheat oven to 375°F
  • Slice eggplant very thin and sauté it to soften.
  • Sauté diced vegetables and spinach in tomato sauce.
    In a baking dish:
  • Spread a thin layer of plain sauce at the bottom of the baking dish.
  • Add a layer of Palmini lasagna.
  • Add a layer of eggplant on the lasagna.
  • Add a layer of sautéed vegetables.
  • Repeat the layers of lasagna, eggplant and vegetables.
  • Place a last layer of palmini lasagna.
  • Top with plain sauce.
  • Bake for around 45 mins.
  • Optional, sprinkle the top with FlavorGod Cheese Flavored Seasoning.
