Palmini Lasagna
| Vegetable/Fruit Day
Ingredients
Palmini Lasagna Sheets or any other hearts of palm pasta sheets
1 medium eggplant
Diced vegetables, to personal taste
1 bag baby spinach
Tomato or sugar free marinara sauce, our favorite is Rao's Marinara Sauce
Directions
Preheat oven to 375°F
Slice eggplant very thin and sauté it to soften.
Sauté diced vegetables and spinach in tomato sauce.
In a baking dish:
Spread a thin layer of plain sauce at the bottom of the baking dish.
Add a layer of Palmini lasagna.
Add a layer of eggplant on the lasagna.
Add a layer of sautéed vegetables.
Repeat the layers of lasagna, eggplant and vegetables.
Place a last layer of palmini lasagna.
Top with plain sauce.
Bake for around 45 mins.
Optional, sprinkle the top with FlavorGod Cheese Flavored Seasoning.
