Stuffed Mushrooms
| Vegetable/Fruit Day
Ingredients
½ cauliflower
1 carrot (chopped finely)
¼ broccoli in small pieces
kale flakes
Pam
salt & pepper
6 large mushrooms
Directions
Process fresh cauliflower in a food processor until it is the size of rice
Microwave cauliflower in a covered dish until soft (DO NOT ADD WATER)
Add kale flakes, broccoli, carrots, salt & pepper and mix
Remove stems from mushrooms and fill with the cauliflower rice mixture
Spray with Pam
Bake in the oven for 20 minutes until soft
Enjoy!
