Mini coconut muffins with pomegranate seeds |  Vegetable/Fruit Day

These bite-sized muffins are a delightful treat made with Singoda Flour and packed with pomegranate seeds that are rich in antioxidants, providing you with a nutritious and delicious indulgence.

Makes 5 servings - each serving uses 5 oz of your daily vegetable allowance

Ingredients
  • 3/4 cup singoda flour
  • 1 tbs Vegan Egg
  • 3 tbs pomegranate seeds
  • 1 tbs unsweetened coconut flakes
  • 2 tbs unsweetened apple sauce
  • Zero-calorie butter spray
  • 0 calorie coconut flavor & syrup, to taste
Directions
  • Mix all ingredients.
  • Divide into 5 muffins.
  • Air fry at 300° for 20 minutes.
