Mini cinnamon spice pumpkin muffins with coconut |  Vegetable/Fruit Day

Makes 6 servings - each serving uses 4 oz of your daily vegetable allowance

Ingredients
  • 1/4 cup singoda flour
  • 2 tbs vegan egg
  • 1 tsp cinnamon
  • 3 packets sweetener
  • 1/2 cup canned pumpkin
  • 2 tbs unsweetened shredded coconut
  • 3 tbs unsweetened apple sauce
  • zero calorie butter spray
Directions
  • mix all dry ingredients
  • add all other ingredients and mix well
  • divide into 6 muffins
  • air fry at 300 for 30 minute
  • enjoy!!
