Mini cinnamon spice pumpkin muffins with coconut | Vegetable/Fruit Day
Makes 6 servings - each serving uses 4 oz of your daily vegetable allowance
Ingredients
- 1/4 cup singoda flour
- 2 tbs vegan egg
- 1 tsp cinnamon
- 3 packets sweetener
- 1/2 cup canned pumpkin
- 2 tbs unsweetened shredded coconut
- 3 tbs unsweetened apple sauce
- zero calorie butter spray
Directions
- mix all dry ingredients
- add all other ingredients and mix well
- divide into 6 muffins
- air fry at 300 for 30 minute
- enjoy!!
