Jennifer's Lettuce Wrap Tacos | Vegetable/Fruit Day
Makes 4 servings - each serving uses 4 oz of your daily vegetable allowance
Ingredients
- 2 cups broccoli slaw
- 1-2 TBSP water
- 4 lettuce leaves
- Jennifer used iceberg lettuce
- 1 avocado, sliced
- “legal” taco seasoning, to taste
- 4 oz salsa
- optional - add other taco toppings (make sure to include in daily allowance)
for example:
- tomato
- onion
- mushrooms
- cilantro
- PAM or other zero-calorie cooking spray
Directions
- spray skillet with PAM and heat on med/med-high
- lightly sauté broccoli slaw
- add water and taco seasoning and cook 3 - 4 mins
- remove from heat
- build tacos with 1 lettuce leaf, 1-2 slices avocado, large spoonful of broccoli slaw
- top with salsa and other taco veggies, as desired
- fold lettuce leaf in half as a taco or roll into a wrap
- enjoy!
