Baked Apple |  Vegetable/Fruit Day

Sweet and simple. That's the best way to describe this interesting twist on the classic baked apple. This recipe is brought to you by member Acc(u)Barbara.

Makes 2 servings. 1 cup of daily fruit allowance.

Ingredients
  • 2 medium apples
    • Apples with deep rich flavor will work best
  • 1 can Zevia black cherry soda
    • Any zero-calorie sweet fruit soda such as strawberry or raspberry will also work
  • Optional, cinnamon, nutmeg or other spices
Directions
  • Preheat oven to 350˚.
  • Wash apples.
  • Cut apples in half and remove the core.
  • Place apple halves in baking dish face down.
  • Pour soda into baking dish until apples are covered halfway.
  • Bake for 1 hour or until apples are soft.
  • Remove from oven and allow to cool.
  • Optional, sprinkle with spices, to taste.
  • Enjoy!
