Avi's Vegetable Curry | Vegetable/Fruit Day
Makes 2 servings - each serving uses 12 oz of your daily vegetable allowance
Ingredients
- 1 medium onion, finely chopped
- 2-3 cloves of garlic, roughly chopped
- 2-3 Bird's eye chilies (spicy), chopped
- 1/3 head cauliflower florets
- 1 medium sweet pepper, chopped
- 1 small tomato, diced
- 1/3 zucchini, chopped but not too thin
- 4 oz fresh mushrooms
- 2 tsp turmeric
- 1 TBSP garam masala
- 8 oz vegetable bouillon
- fresh cilantro
- squeeze of lemon
- PAM or other zero-calorie cooking spray
Directions
- in a separate pot, heat a spray of PAM
- sauté onion until translucent
- add garlic, chilies, cauliflower, sweet peppers and tomato
- continue to sauté, getting some color but not burning
- add zucchini and mushrooms
- add turmeric and garam masala, mixing gently but well to release the aromas
- add bouillon - just enough to cover the cauliflower
- cook gently until cauliflower is tender
- finish off with fresh cilantro and a squeeze of lemon
- enjoy!
