Deepa's Okra | Vegetable/Fruit Day
Makes 1 serving - uses 6 oz of your daily vegetable allowance
Ingredients
- 6 oz okra
- 1 tsp mustard seeds (whole)
- ½ tsp asafetida
- This is an Indian spice you may buy in an Indian grocery. Strong aroma disappears when cooked
- ¼ tsp turmeric
- red chili powder, to taste
- This is an Indian spice you may buy in an Indian grocery
- salt, to taste
- PAM or other zero-calorie cooking spray
Directions
- cut off top and tail of okra and slice into circles approx. 1/8 - 1/4 inch thick
- note, thinner slices will be crispier
- spray PAM on a saute pan or small wok (something with sides)
- on medium heat, add mustard seeds and asafetida
- when mixture begins to “crackle” add okra
- cook for 5 mins, stirring often
- add turmeric, red chili powder and salt, to taste
- stir and continue cooking until desired crispiness
- enjoy!
