Janet's Candied Carrots |  Vegetable/Fruit Day

Makes 2 servings - uses 8 oz of your daily vegetable allowance

Ingredients
  • 1 lb long carrots
  • PAM butter flavor or other zero-calorie butter flavored cooking spray
  • 1/3 - 1/2 cup Walden Farms pancake syrup
  • 5 Werther's Original caramel cinnamon sugar free hard candies
Directions
  • pre-heat oven to 400˚
  • spray baking pan with PAM butter flavor
  • peel carrots and cut off ends
  • cut each carrot in half horizontally and down the long way as many times as necessary to make wooden matchstick size
  • place carrots on baking pan, spreading them apart as much as possible
  • spray carrots with PAM butter flavor
  • pour pancake syrup over carrots, stirring to coat evenly
  • bake for 30 minutes
  • while carrots are baking, place Werther's candies in a Ziploc baggie making sure to seal bag properly
  • smash candies with a meat tenderizer, side of a large knife or other similar tool until you have a rough powder
  • remove carrots from oven
  • sprinkle candy powder over carrots, stirring well
  • bake for another 10 minutes
  • enjoy!
