Janet's Candied Carrots | Vegetable/Fruit Day
Makes 2 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 1 lb long carrots
- PAM butter flavor or other zero-calorie butter flavored cooking spray
- 1/3 - 1/2 cup Walden Farms pancake syrup
- 5 Werther's Original caramel cinnamon sugar free hard candies
Directions
- pre-heat oven to 400˚
- spray baking pan with PAM butter flavor
- peel carrots and cut off ends
- cut each carrot in half horizontally and down the long way as many times as necessary to make wooden matchstick size
- place carrots on baking pan, spreading them apart as much as possible
- spray carrots with PAM butter flavor
- pour pancake syrup over carrots, stirring to coat evenly
- bake for 30 minutes
- while carrots are baking, place Werther's candies in a Ziploc baggie making sure to seal bag properly
- smash candies with a meat tenderizer, side of a large knife or other similar tool until you have a rough powder
- remove carrots from oven
- sprinkle candy powder over carrots, stirring well
- bake for another 10 minutes
