Mexican Pizza (Pat) |  Vegetable Day

Ingredients
  • plantain
  • avocado
  • PAM
  • tomatoes
  • onions
Directions
  • boil a cut-up plantain in skin till very soft
  • mash up the plantain with 1/2 avocado (this is the crust)
  • spray pan with PAM (so it doesn't stick)
  • shape into a flat round circle and bake at 325 for 15 to 20 minutes
  • top with minced tomatoes and onions
  • slice and add the rest of the avocado
  • season to taste
  • bake or put under broiler till topping is tender. Enjoy!
