Mexican Pizza (Pat) |  Vegetable Day
    
	
	
    
    Ingredients
	 
    
	     
                      - plantain 
- avocado 
- PAM 
- tomatoes 
- onions
 
    Directions
     
                      - boil a cut-up plantain in skin till       very soft
- mash up the plantain with 1/2 avocado       (this is the crust)
- spray pan with PAM (so it doesn't       stick) 
- shape into a flat round circle and bake       at 325 for 15 to 20 minutes
- top with minced tomatoes and onions
- slice and add the rest of the avocado
- season to taste
- bake or put under broiler till       topping is tender. Enjoy!
