Mashed Plantains (Gilda) |  Vegetable Day
    
	
	
    
    Ingredients
	 
    
	       
                      - 1 green plantain (cut in 3 or 4       pieces, skin on)
- 1 medium onion, diced
- 1 clove garlic, minced
- salt and black pepper
 
    Directions
     
                      - boil plantain for about 45 minutes or       until soft
- while cooking sauté an onion in pan       sprayed lightly with Pam
- you can add water or veggie broth to       keep the onions caramelizing
- add the garlic and cook another       minute or so
- when plantains are done, remove from       water, slit peel and remove
- mash the plantains, add the sautéed onions,       salt and pepper to taste
