Miracle Noodle Primavera  |  Vegetable Day
    
	Makes 4 servings - uses 14 oz of your daily vegetable allowance 
	
    
    Ingredients
	 
    
	      
                      - 1 can San Marzano diced tomato
- 1 small onion, sliced
- 4 cloves of garlic, chopped
- bunch of asparagus, trimmed
- 3 oz mushrooms
- 3 oz artichoke
- ½ yellow bell pepper, sliced
- pink salt
- black pepper
- garlic powder
- crushed red pepper
- 1 package Miracle Noodle Garlic & Herb
- PAM or other zero-calorie cooking spray
 
    Directions
      sauce:
                      - spray frying pan with PAM
- sauté onion and garlic in frying pan until brown
- add salt, pepper, garlic powder and crushed  pepper, to taste
- add in can of tomato and simmer until the liquid  has evaporated                    
                      roasted 
vegetables:
- line a baking dish with non-stick aluminum foil
- place the vegetables in a single layer in the pan  and lightly spray with PAM
- add a pinch of salt, pepper and garlic powder
- roast on lower rack of oven at 375⁰ for 30  minutes or until slightly brown
noodles:
                      - prepare Miracle Noodle Garlic & Herb  according to package
- when noodles are ready, add in sauce and vegetables
