Veggie Fajitas (Sarah) | Vegetable Day
Ingredients
slice all vegetables into strips:
- Portobello mushrooms
- zucchini
- red, orange, and yellow peppers
- red onion
- fresh Jalapeno for an extra "KICK"
- iceberg lettuce (cut in half and tear off whole lettuce cup)
- ground cumin
- Mexican oregano
- chipotle powder (this is spicy but adds a great smoked flavor)
- salt
- pepper
Directions
- spray sauté pan with PAM--get the pan hot
- add onion, peppers, and mushrooms and sauté (they take the longest to cook)
- add zucchini and spices
- you'll want to brown the veggies a little for extra flavor
- when veggies are tender, take off heat and let sit for a few minutes for all the juices to rest
- put guacamole and salsa in the lettuce cup
- add veggies and roll!
