Veggie Fajitas (Sarah) |  Vegetable Day

Ingredients

slice all vegetables into strips:

  • Portobello mushrooms
  • zucchini
  • red, orange, and yellow peppers
  • red onion
  • fresh Jalapeno for an extra "KICK"
  • iceberg lettuce (cut in half and tear off whole lettuce cup)
  • ground cumin
  • Mexican oregano
  • chipotle powder (this is spicy but adds a great smoked flavor)
  • salt
  • pepper
Directions
  • spray sauté pan with PAM--get the pan hot
  • add onion, peppers, and mushrooms and sauté (they take the longest to cook)
  • add zucchini and spices
  • you'll want to brown the veggies a little for extra flavor
  • when veggies are tender, take off heat and let sit for a few minutes for all the juices to rest
  • put guacamole and salsa in the lettuce cup
  • add veggies and roll!
