Liz's Fajita Lettuce Wrap | Vegetable Day
Makes 2 servings - uses 6 oz of your daily vegetable allowance
Ingredients
- 2 oz red pepper, sliced thinly
- 2 oz yellow pepper, sliced thinly
- 2 oz orange pepper, sliced thinly
- 2 oz portobello mushroom, sliced thinly
- 1 oz red onion, sliced thinly
- 1.5 TBSP fajita seasonings
- 1/3 cup water
- 2 oz legal guacamole
- 2 large iceberg lettuce leaves
- PAM or other zero-calorie cooking spray
Directions
- spray skillet with PAM and place on medium heat
- add peppers, mushroom and onion to skillet
- sprinkle vegetables with fajita seasoning
- add water
- sauté until liquid is absorbed
- divide mixture in half and scoop into the 2 lettuce wraps
- add 1 oz of guacamole to each wrap
- close wraps and enjoy
