Falafel (Susan M) | Vegetable Day
Ingredients
- 2 yellow, boiled, cooled plantains
- 4 oz. onions
- 1 clove garlic
- 1/2 t cumin
- 1/2 t coriander
- 1 1/2 t parsley
- salt
- pepper
Directions
- place all the above ingredients in food processor
- make 6-8 balls and press into patties
- spray pan with PAM heat with 4 cloves of garlic
- fry each side until golden brown and serve
