Banana Chocolate Chip Pancakes |  Vegetable/Fruit Day

Try these tasty vegan pancakes that are gluten-free and have no added sugar.

Makes 1 servings - 4 oz veggie allowance, 1/4 cup of fruit

Ingredients
  • 1/4 cup Singoda flour
  • 1/4 banana
  • 15 Lily’s dark chocolate baking chips (= 1 TBSP daily cocoa allowance)
  • 1/4 tsp The Vegg, vegan egg yolk (optional)
  • 1 packet Splenda Naturals or other zero calorie sweetener, to taste
  • 3 TBSP water
  • Zero calorie cooking spray
Directions
  • Combine Singoda and the Vegg, vegan egg yolk, optional.
  • Add water until fully blended.
  • Add packet of sweetener mixing well.
  • Gently fold in bananas and chocolate chips.
  • Spray pan with cooking spray and pre-heat on high flame.
  • Lower flame to medium-low.
  • Batter is quite thick, so spoon into pan spreading as evenly as possible.
  • Flip pancake and cook second side.
  • Enjoy plain or with ‘legal’ pancake syrup such as Lakanto or Walden Farms.
