Cauliflower and Vegetable Rice |  Vegetable/Fruit Day

Makes 2 servings - uses 11 oz of your daily vegetable allowance

Ingredients
  • 2 TBSP Walden Farms Orange Marmalade
  • 2 TBSP Walden Farms Apricot Marmalade
  • Braggs liquid Aminos
  • 12 oz bag of frozen riced cauliflower
  • 10 oz bag of Mann's Powerblend – Superfood (broccoli, carrots, kale, cabbage, and Brussels sprouts)
  • PAM or other zero calorie cooking spray
Directions
  • for the sauce combine Walden Farms Orange Marmalade, Walden Farms Apricot Marmalade and Braggs liquid Aminos
  • heat sauce in the microwave and mix
  • cook the riced cauliflower in the microwave
  • while that is cooking, spray a little Pam in a wok pan and sauté a bag of Mann's Powerblend - Superfood
  • add the sauce
  • after it is mostly softened, add the riced cauliflower
  • enjoy!
