Cauliflower and Vegetable Rice | Vegetable/Fruit Day
Makes 2 servings - uses 11 oz of your daily vegetable allowance
Ingredients
- 2 TBSP Walden Farms Orange Marmalade
- 2 TBSP Walden Farms Apricot Marmalade
- Braggs liquid Aminos
- 12 oz bag of frozen riced cauliflower
- 10 oz bag of Mann's Powerblend – Superfood (broccoli, carrots, kale, cabbage, and Brussels sprouts)
- PAM or other zero calorie cooking spray
Directions
- for the sauce combine Walden Farms Orange Marmalade, Walden Farms Apricot Marmalade and Braggs liquid Aminos
- heat sauce in the microwave and mix
- cook the riced cauliflower in the microwave
- while that is cooking, spray a little Pam in a wok pan and sauté a bag of Mann's Powerblend - Superfood
- add the sauce
- after it is mostly softened, add the riced cauliflower
- enjoy!
