Whipped Cream | Milk/Yogurt Day

Makes 2 servings. Uses 2 oz of daily milk allowance.
Ingredients
- 3 oz milk
- 2 Tbsp plain yogurt
- 1/2 tsp xanthan gum
- 2-3 packets Truvia or other zero-calorie sweetener
- 1 tsp pure vanilla extract, optional
Directions
- Put whisk in freezer for 15 minutes.
- Note, we whisked by hand, but you may use an electric mixer.
- Make sure milk and yogurt are refrigerated until you are ready to begin - cold ingredients whip better.
- In a medium bowl, whisk milk briskly until it becomes a thick froth (3-5 mins).
- Add the yogurt and continue to whisk briskly.
- Add xanthan gum and whisk for 1 minute.
- Let stand for 2 minutes.
- Whisk briskly again until consistency allows you to create "peaks".
- Note, the more xanthan gum you use, the thicker/more gelatinous it will get. It is ok to use up to 1 tsp for this recipe.
- Add sweetener, to taste.
- Add vanilla, if desired. Gives it a “marshmallow” flavor.
- Use as a topping on Acc(u)Legal hot chocolate, chocolate pudding, jello, an ice cream sundae or on its own with a spoon!
