A tasty mixture of diced plantain, peppers, onions and seasonings, these Mock Home Fries are great for lunch or dinner! This recipe brought to you by Acc(u)Member Aundrea.
Makes 1 serving - uses 1 cup of your daily fruit allowance and 2 oz of your daily vegetable allowance.
Ingredients
1 yellow plantain, diced
1/4 cup onion, diced
1/4 cup green pepper, diced
Salt and pepper
PAM butter, PAM olive oil or other zero-calorie cooking spray
2-3 Tbsp water
Directions
Combine diced ingredients in a bowl.
Season with salt and pepper, to taste.
Spray with PAM.
Place in sauté pan with water.
Cover and cook for 10-12 minutes, stirring frequently, until plantain softens.
Continue to cook until they “crisp up” a little.
