Jill's Rainbow Stir Fry | Vegetable/Fruit Day
Makes 2 servings - uses 12 oz of your daily vegetable allowance and 1/4 cup of your daily fruit allowance
Ingredients
- 1 small red onion, chopped
- 1 clove of garlic, chopped
- 12 oz bag of rainbow salad
- 1 small zucchini, chopped
- 1 Clementine or small seedless orange
- Braggs Liquid Aminos
- PAM Olive Oil or other zero calorie cooking spray
Directions
- spray medium pan with PAM Olive Oil
- sauté onion and garlic on medium heat
- add zucchini and rainbow salad to sauté
- stir fry until soft
- add Braggs Liquid Aminos, to taste
- remove from heat
- add Clementines
- mix well
- enjoy!
