Jill's Rainbow Stir Fry |  Vegetable/Fruit Day

Makes 2 servings - uses 12 oz of your daily vegetable allowance and 1/4 cup of your daily fruit allowance

Ingredients
  • 1 small red onion, chopped
  • 1 clove of garlic, chopped
  • 12 oz bag of rainbow salad
  • 1 small zucchini, chopped
  • 1 Clementine or small seedless orange
  • Braggs Liquid Aminos
  • PAM Olive Oil or other zero calorie cooking spray
Directions
  • spray medium pan with PAM Olive Oil
  • sauté onion and garlic on medium heat
  • add zucchini and rainbow salad to sauté
  • stir fry until soft
  • add Braggs Liquid Aminos, to taste
  • remove from heat
  • add Clementines
  • mix well
  • enjoy!
