Cheri's Open Faced Sandwich | Vegetable/Fruit Day

Makes 1 serving - topping uses 7 oz of your daily vegetable allowance
(plantain toast counted separately)
Ingredients
- 3 oz avocado, sliced
- 2 oz sweet onion, sliced
- 2 oz tomato, sliced
- sea salt, to taste
- fresh basil, chopped
- lemon juice
- PAM or other zero-calorie cooking spray
Directions
- make Janet's Plantain Toast
- place avocado slices on the toast and drizzle with lemon juice
- lightly spray a pan with PAM and “fry” onions
- place “fried” onions on top of avocado
- top with sliced tomato
- sprinkle with sea salt
- top with chopped basil
