Spinach, Faux Creamed

Ingredients
2 10 oz. packages fresh spinach--steamed and drained
PAM
2 Tablespoon minced shallots or more if you like
1/8 teaspoon sea salt
1/8 teaspoon nutmeg
10 oz. pureed cauliflower
Directions
steam spinach 7 minutes
steam or microwave frozen cauliflower according to package
sauté shallots for 2 minutes until clear
add nutmeg and sea salt to cauliflower and puree adding some of the cauliflower water for a creamy consistency
combine the pureed cauliflower, steamed spinach and shallots and heat and stir a bit until all is mixed together well
