Apple Pancakes (Pat) |  Vegetable/Fruit Day
    
	This recipe uses your fruit allowance for the day.
	  
	
    
    Ingredients
	      
                      - 1 med yellow to brown plantain
 
                         - 1 med granny smith apple
 
                         - 1/2 teaspoon cinnamon
 
                         - 1 - 2 packets Truvia
 
                         - pinch of salt
 
                         - PAM
 
                         - favorite sugar-free syrup
 
                    
  
    Directions
     
                      - boil or microwave plantain until       tender
 
                         - peel and core apple, grate apple on       large holes of a box grater
 
                         - mix together with other ingredients       till it forms a dough-like texture
 
                         - shape into two balls, flatten balls       into pancakes
 
                         - brown on a lightly PAM-sprayed       stick-free griddle
 
                         - turn and brown other side
