Apple Pancakes (Pat) |  Vegetable/Fruit Day

This recipe uses your fruit allowance for the day.

Ingredients
  • 1 med yellow to brown plantain
  • 1 med granny smith apple
  • 1/2 teaspoon cinnamon
  • 1 - 2 packets Truvia
  • pinch of salt
  • PAM
  • favorite sugar-free syrup
Directions
  • boil or microwave plantain until tender
  • peel and core apple, grate apple on large holes of a box grater
  • mix together with other ingredients till it forms a dough-like texture
  • shape into two balls, flatten balls into pancakes
  • brown on a lightly PAM-sprayed stick-free griddle
  • turn and brown other side
  • serve with your favorite sugar-free syrup ( I used caramel )
