Roasted Red Pepper Dressing / Dip | Vegetable/Fruit Day
Makes 8 servings - uses 4 oz of your daily vegetable allowance
Ingredients
- 12 oz roasted red peppers
- 1 avocado
- 2 ½ mini cucumbers, peeled
- 1 medium red onion
- juice of 1 lemon
- ½ TBSP garlic powder
- ½ TBSP onion powder
- salt
- pepper
Directions
- puree all ingredients
- use water to adjust consistency
- add spices, to taste
- enjoy as dip or salad dressing!
