Creamy Avocado Dressing |  Vegetable/Fruit Day

Makes 6-8 servings - uses 1 oz of your vegetable allowance

Ingredients
  • 1 small or 1/2 large avocado
  • 1/2 cucumber
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 clove garlic
  • 1/4 teaspoon salt
  • 1/2 cup chopped cilantro
Directions
  • cut avocado in half, then remove skin and pit
  • save the pit for later
  • place all ingredients in food processor or blender
  • note: to make a dip rather than dressing, use 1/8 cup each lemon juice and water
  • mix until smooth
  • enjoy over your salad or crudite!

Note: this dressing will keep for several days in the refrigerator. Before storing, place pit in the dressing to help prevent it from turning brown.
