Summer Salad | Vegetable/Fruit Day
This crisp, refreshing salad will enhance any meal. This recipe brought to you by member Acc(u)Jill.
Makes 2 servings - uses 12 oz of your daily vegetable allowance and ½ cup of your daily fruit allowance
Ingredients
- 1 red onion
- 1 Vidalia or sweet onion
- 1 ripe avocado
- 2 tomatoes
- 1 cucumber
- 1 cup fresh watermelon or mango
- 1 lemon
- Salt
- Pepper
Directions
- Chop onions, avocado, tomatoes, cucumber, watermelon/mango.
- Toss ingredients in a large bowl.
- Squeeze lemon over salad.
- Add salt and pepper, to taste.
- Toss salad.
- Enjoy!
