Mexican Salad (Carolyn) |  Vegetable/Fruit Day

Makes 2 servings

Ingredients
  • 1 zucchini cubed
  • 1 yellow squash cubed
  • 1 onion peeled and sliced
  • 1 package of Portobello mushrooms ( Carolyn chose the bigger ones but you can use anything)
  • PAM
  • 1 - avocado
  • juice from one lime
  • 1 - jalapeno seeded
  • 1 - tomato cut in bits
Directions
  • spray pan with PAM and cook until tender or to the consistency you like
  • add 1 package of Mexican seasoning
  • stir, add water & let cook
  • while that is cooking mash in a bowl: avocado, juice from one lime, jalapeno, tomato
  • line a bowl with lettuce
  • put on top of lettuce
  • when veggies are done - top salad with them and ENJOY!!
