Mexican Salad (Carolyn)
| Vegetable/Fruit Day
Makes 2 servings
Ingredients
1 zucchini cubed
1 yellow squash cubed
1 onion peeled and sliced
1 package of Portobello mushrooms ( Carolyn chose the bigger ones but you can use anything)
PAM
1 - avocado
juice from one lime
1 - jalapeno seeded
1 - tomato cut in bits
Directions
spray pan with PAM and cook until tender or to the consistency you like
add 1 package of Mexican seasoning
stir, add water & let cook
while that is cooking mash in a bowl: avocado, juice from one lime, jalapeno, tomato
line a bowl with lettuce
put on top of lettuce
when veggies are done - top salad with them and ENJOY!!
