Broccoli Pepper Salad With Sweet And Salty Sprinkle | Vegetable/Fruit Day
Makes 2 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- ½ head fresh broccoli, chopped large
- or one 12 oz bag frozen broccoli
- 2 stalks celery, sliced
- ½ red pepper, sliced lengthwise
- ¼ red onion, sliced lengthwise
- 1 tsp fresh ground cinnamon
- 1 packet Truvia or other zero-calorie sweetener
- 1 tsp freshly ground salt (adjust to taste)
- 1 tsp freshly ground pepper
- cayenne pepper (adjust to taste)
- legal guacamole (optional)
Directions
salad:
- steam broccoli
- if you prefer, you may use raw broccoli
- mix ingredients
- serve on a nice platter
sprinkle:
- in a small bowl, mix cinnamon, Truvia, freshly ground salt and pepper, cayenne (optional)
- sprinkle mixture on top of salad
- optional - top with legal guacamole (not included in serving size, below)
- note, extra sprinkle may be stored and used for extra flavor on other recipes
