Great for a vegetable soup base
Ingredients
- yellow onions, quartered
- 1 red onion, quartered
- 5 carrots, chopped
- 3 leeks, chunks
- 3 celery stalks, chopped up
- 1 garlic clove
- 1 bay leaf
Directions
- preheat oven to 450 F.
- put the vegetables in a baking pan, for 1 hour. Stir occasionally
- place vegetables in a soup pot, add 2 quarts water, simmer 1 hour
- strain
- can be refrigerated for four (4) days or frozen for a week
