Cucumber Avocado Soup | Vegetable/Fruit Day
(adapted from “Mother Nature Network”) Makes 2 servings - uses 12 oz of your daily vegetable allowance
Ingredients
- 2 cucumbers, peeled, seeded and sliced
- 1 ripe avocado, halved, pitted and peeled
- ¼ cup jalapeno pepper, seeded and sliced
- ¼ cup fresh cilantro
- 1 TBSP ReaLime juice or other zero-calorie lime juice
- 1 TBSP ReaLemon juice or other zero-calorie lemon juice
- ¼ cup water
- ½ tsp sea salt
- 6 cherry or grape tomatoes, halved (optional)
Directions
- put all ingredients, except for tomatoes, in blender
- mix until smooth
- adjust seasonings to personal taste
- chill in refrigerator for at least one hour
- garnish with tomato halves and/or sprig of cilantro
- enjoy!
