Gilda's Bok Choy Soup

Ingredients
8 oz. veggie broth
1 or 2 ribs of bok choy, sliced thin on the diagonal-stem and leaves
1 scallion chopped
sliced shitake mushrooms
fresh ginger (if you have some, about a quarter-size slice)
Miracle Noodles (optional)
Bragg's Amino Acids (optional)
Directions
heat veggie broth
add bok choy, shitake mushrooms, scallion, fresh ginger
add rinsed Miracle Noodles (optional)
bring to a boil and simmer 1 to 2 minutes
add Bragg's Amino Acids (optional)
