Sushi |  Vegetable Day
    
	Makes 1 serving. Uses 6-8 oz of your veggie day allowance
	
    
    Ingredients
	 
    
	     
						    - 1 Sheet Nori (seaweed wrap)
- ¼ can Palmini Rice (you may       substitute cauliflower rice or Miracle rice)
- ½ small cucumber
- ½ avocado
- 3 baby carrots
- Ginger, thinly sliced
- You can add other ingredients       such as asparagus, spinach, mushrooms, mango. Whatever you may enjoy in a       sushi roll.
- You may add salt, pepper or       other seasonings
- Braggs Liquid Aminos
 
    Directions
     
					        - Slice cucumber, avocado and       baby carrots in thin strips (julienne)
- Lay Nori wrap on a bamboo mat       or paper towel
- Place spoonful of “rice” in       center of nori.
- Spread across nori leaving ½       inch around all edges
- Place julienned vegetables       and ginger on one end of the nori
- Add seasoning if you are       using it
- Gently roll nori, vegetable       end first, into a “log”
- Using a sharp knife cut roll       into thick pieces
- Dip in Braggs Liquid Aminos       and enjoy!
