Palmini Lasagna | Vegetable Day
Ingredients
- Palmini Lasagna Sheets or any other hearts of palm pasta sheets
- 1 medium eggplant
- Diced vegetables, to personal taste
- 1 bag baby spinach
- Tomato or sugar free marinara sauce, our favorite is Rao's Marinara Sauce
Directions
- Preheat oven to 375°F
- Slice eggplant very thin and sauté it to soften.
- Sauté diced vegetables and spinach in tomato sauce.
In a baking dish:
- Spread a thin layer of plain sauce at the bottom of the baking dish.
- Add a layer of Palmini lasagna.
- Add a layer of eggplant on the lasagna.
- Add a layer of sautéed vegetables.
- Repeat the layers of lasagna, eggplant and vegetables.
- Place a last layer of palmini lasagna.
- Top with plain sauce.
- Bake for around 45 mins.
- Optional, sprinkle the top with FlavorGod Cheese Flavored Seasoning.
