Stuffed Mushrooms | Vegetable Day
Ingredients
- ½ cauliflower
- 1 carrot (chopped finely)
- ¼ broccoli in small pieces
- kale flakes
- Pam
- salt & pepper
- 6 large mushrooms
Directions
- Process fresh cauliflower in a food processor until it is the size of rice
- Microwave cauliflower in a covered dish until soft (DO NOT ADD WATER)
- Add kale flakes, broccoli, carrots, salt & pepper and mix
- Remove stems from mushrooms and fill with the cauliflower rice mixture
- Spray with Pam
- Bake in the oven for 20 minutes until soft
- Enjoy!
