Vegetable Soup | Vegetable Day
Ingredients
- 32 oz vegetable stock
- approx 3 lbs assorted vegetables & seasonings as desired
Ingredients in soup pictured:
- bok choy
- onion
- celery
- butternut squash
- red pepper
- carrots
- green beans
- Himalayan salt
- black pepper
- Bragg’s Organic Sprinkle
Directions
- pour stock in large pot
- chop vegetables and add them to pot
- season to taste
- cover and simmer on a low flame until vegetables are soft (2-3 hrs) stirring every 30 mins
