Roasted Cauliflower | Vegetable Day
Ingredients
- 1 cauliflower
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 lemon, juiced
- chopped parsley to garnish
Directions
- Preheat oven to 375
- Carefully cut and remove the core
- Grease your baking dish with half a tablespoon of olive oil
- Add the cauliflower and drizzle with remaining olive oil
- Sprinkle with paprika, sea salt and pepper
- Rub in the seasoning with your hands
- Roast for 50-60 minutes, or until it’s browned and a skewer pokes into it easily
- Cut into wedges and serve with lemon juice and parsley
