Desiree's Roasted Garlic Curry Cauliflower | Vegetable Day
Makes 2 servings - each serving uses 8 oz of your daily vegetable allowance
Ingredients
- 1 head cauliflower
- 3 cloves garlic, crushed
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp coriander
- 1/4 tsp red pepper
- zero-calorie grapeseed oil cooking spray or other zero-calorie cooking spray
Directions
- preheat oven to 400˚
- cut and clean cauliflower florets
- place in a large bowl
- lightly spray with cooking spray
- in a separate bowl, combine all “powder” spices
- sprinkle half of the spices over the cauliflower
- toss to coat cauliflower
- toss in crushed garlic
- sprinkle remaining spices and toss again until all ingredients are fully incorporated
- place cauliflower on a sheet pan with parchment paper, spreading out florets so they are not crowding each other
- bake for 30 minutes
