Jennifer's Lettuce Wrap Tacos |  Vegetable Day

Makes 4 servings - each serving uses 4 oz of your daily vegetable allowance

  • 2 cups broccoli slaw
  • 1-2 TBSP water
  • 4 lettuce leaves
    • Jennifer used iceberg lettuce
  • 1 avocado, sliced
  • “legal” taco seasoning, to taste
  • 4 oz salsa
  • optional - add other taco toppings (make sure to include in daily allowance)

    for example:

    • tomato
    • onion
    • mushrooms
    • cilantro
  • PAM or other zero-calorie cooking spray
  • spray skillet with PAM and heat on med/med-high
  • lightly sauté broccoli slaw
  • add water and taco seasoning and cook 3 - 4 mins
  • remove from heat
  • build tacos with 1 lettuce leaf, 1-2 slices avocado, large spoonful of broccoli slaw
  • top with salsa and other taco veggies, as desired
  • fold lettuce leaf in half as a taco or roll into a wrap
  • enjoy!
