Spinach Stir Fry |  Vegetable Day

Makes 4 servings - uses 8 oz of your daily vegetable allowance

Ingredients
  • 16 oz baby spinach
  • 10 oz mushrooms, sliced
  • 1 medium red pepper, diced
  • 1/2 red onion, chopped
  • Bragg's liquid aminos
  • garlic salt
  • salt
  • pepper
Directions
  • heat saucepan on medium heat
  • when pan is hot, spray pan with a thin layer of Bragg's liquid aminos
  • sauté spinach
  • as spinach begins to wilt, spray with Bragg's to keep moist, mixing well
  • add mushrooms, peppers, onions, stirring frequently
  • add garlic salt, salt, pepper (to taste)
  • cook until mushrooms and peppers are tender
  • enjoy!
