Veggie Pizza (Susan M) | Vegetable Day
8 1/2 oz. towards Veggie Allowance & Plantain = 1 Fruit Allowance
Ingredients
- 1 yellow plantain, boiled for 45 minutes, then cooled
- 1/2 t onion powder
- 1/2 t garlic powder
- 1/2 t parsley
- 1/4 t kosher salt
- 2 oz. chopped onions
- 1 1/2 oz. diced red pepper
- 1 1/2 oz. diced green pepper
- 1 1/2 oz. diced zucchini
- 2 oz. MUIR GLENN ORGANIC TOMATO SAUCE
- 1 green plantain
- 1/2 t onion powder
- 1/2 t garlic powder
- 1/2 t parsley
- 1/4 t kosher salt
Directions
- put plantain, garlic powder, onion powder, parsley and salt in food processor
- pulse until it's all mashed and all ingredients are combined
- preheat oven to 425 and spray pizza stone with Pam
- roll plantain mixture into a ball, then carefully [stone is hot] flatten in to pizza crust onto hot stone
- cook 20 minutes BUT WATCH CAREFULLY SO IT DOESN'T BURN
- after 20 minutes flip crust and cook for 10 minutes
- while it's cooking in a fry pan sprayed with Pam, sauté onions, red peppers, green peppers and zucchini
- top crust with 2 oz. MUIR GLENN ORGANIC TOMATO SAUCE
- then add veggies
- cook for 10 minutes and serve
