Veg Haka Noodles | Vegetable Day
(adapted from Lakshmi's recipe www.laksmisdomain.com/niftyhands)
Makes 2 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 6 oz (1/2 pack) kelp noodles
- 1 cup carrot, chopped
- 1 cup cabbage, shredded (we used savoy)
- 1 cup red pepper, sliced
- 1 cup yellow onion, chopped
- Braggs Liquid Aminos
- crushed red pepper
- PAM olive oil or other zero-calorie cooking spray
Directions
- cut kelp noodles to desired length
- boil noodles for 10 minutes
- heat sauté pan with PAM olive oil
- sauté onions until soft and translucent
- add carrots to the sauté (3 - 5 minutes)
- add cabbage and red peppers to the sauté
- spray sauté with Braggs Liquid Aminos, mix well (we used 5 spritzes)
- sprinkle crushed red pepper, to taste
- add noodles to sauté and stir for approximately 1 minute
- enjoy!
