Zucchini Boats | Vegetable Day
Makes 2 servings - uses approximately 8 oz. of your daily vegetable allowance
Ingredients
- 1 zucchini
- 1 tomato
- garlic
- onion
- basil
- oregano
- salt
- pepper
Directions
- preheat oven to 350⁰ (375⁰ if you prefer extra crispy)
- cut the ends off the zucchini
- slice zucchini in half lengthwise and scoop out most of the flesh making “zucchini boats”
- dice the zucchini flesh (not the “boat”) and tomatoes
- dice in the remaining ingredients (quantities to taste)
- note, you may add in any other favorite vegetables you like such as mushrooms, peppers, etc.
- apply a thin layer of the diced vegetable mixture into the“zucchini boats”
- bake for 30 minutes
- note, you can pick up the “zucchini boats” and eat them like a slice of pizza (makes the house smell like pizza too!)
