Non-Stuffed Vegetarian Cabbage  |  Vegetable Day
    
	Makes 4 servings - uses 12 oz of your daily vegetable allowance 
	
    
    Ingredients
	 
    
	     
                      - 1 green cabbage
- 1 head of cauliflower
- 1 large sweet onion
- 14 oz can of sauerkraut (no vinegar)
- Splenda or other zero-calorie sweetener
- salt
- parsley
 
    Directions
     
                      - cut off outer cabbage leaves and cut cabbage in  chunks
- cut off base of cauliflower and cut cauliflower  in chunks
- cut onion in chunks
- put cabbage, cauliflower and onion in pot
- cover with water, sprinkle with salt and boil  until soft
- drain well
- return mixture to pot
- add sauerkraut (do not drain)
- cook on very low heat for 15 - 20 minutes
- season to taste with sweetener, salt, parsley
