Bess' Lettuce Wraps | Vegetable Day
Makes 4 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 8 large pieces of Iceberg or Romaine lettuce
- 1 medium avocado, sliced
- 1 cucumber, diced
- 8 oz white button mushrooms, thinly sliced
- 3 oz bean sprouts (in water)
- 1 large carrot, shredded
- 2 - 3 TBSP Braggs Liquid Aminos
- 3 - 4 TBSP Walden Farms peanut spread
- 1 - 2 packets zero-calorie sweetener
Directions
- peanut sauce:
- mix (to taste) Walden Farms peanut spread, Braggs Liquid Aminos and zero-calorie sweetener
- heat in pan on low until it thickens
- lay out lettuce leaves on a plate
- place avocado and cucumber in center of each piece of lettuce
- in a saucepan, sauté mushrooms in Braggs Liquid Aminos
- add sautéed mushrooms to center of each piece of lettuce
- top with bean sprouts and shredded carrots
- drizzle with peanut sauce
- roll lettuce leaves with vegetables inside to create wrap
- enjoy!
