Cauliflower Stuffed Peppers |  Vegetable Day

Makes 4 servings - uses 10 oz of your daily allowance

Ingredients
  • 1 head of cauliflower, chopped
  • 2 red peppers
  • 1 clove garlic, chopped
  • 1 shallot, chopped
  • 2 oz legal tomato sauce
  • PAM olive oil spray or other zero-calorie olive oil spray
  • salt
  • pepper
Directions
  • spray pan with PAM
  • sauté shallots, garlic, salt and pepper until it caramelizes
  • add cauliflower and sauté for approximately 10 minutes
  • preheat oven to 400⁰
  • cut red peppers in half
  • layer each red pepper half as follows:
    • 1 tsp tomato sauce
    • cauliflower mixture
    • 1 tsp tomato sauce
    • cauliflower mixture
  • place red peppers in oven safe dish
  • cover with aluminum foil
  • bake for 45 minutes
