Cauliflower Stuffed Peppers | Vegetable Day
Makes 4 servings - uses 10 oz of your daily allowance
Ingredients
- 1 head of cauliflower, chopped
- 2 red peppers
- 1 clove garlic, chopped
- 1 shallot, chopped
- 2 oz legal tomato sauce
- PAM olive oil spray or other zero-calorie olive oil spray
- salt
- pepper
Directions
- spray pan with PAM
- sauté shallots, garlic, salt and pepper until it caramelizes
- add cauliflower and sauté for approximately 10 minutes
- preheat oven to 400⁰
- cut red peppers in half
- layer each red pepper half as follows:
- 1 tsp tomato sauce
- cauliflower mixture
- 1 tsp tomato sauce
- cauliflower mixture
- place red peppers in oven safe dish
- cover with aluminum foil
- bake for 45 minutes
