Swanson Cauliflower Poppers | Vegetable Day

Makes 4 servings - uses 4 oz of your daily vegetable allowance
Ingredients
- 1 head cauliflower
- ½ medium lemon, zested
- 1 tsp Swanson Organic Certified Organic Curry Powder
- ¼ tsp Swanson Organic 100% Certified Organic Garlic Powder
- 1 TBSP Santa Cruz Organic Pure Lemon Juice
- Swanson Ultra Himalayan Crystal Salt
- PAM olive oil flavor or other zero-calorie cooking spray
Directions
- preheat oven to 425⁰
- alternative: turn grill or stovetop to medium heat
- mix curry, garlic, lemon juice and a few “spritzes” of PAM olive oil in a large bowl
- cut florets off cauliflower and add to bowl
- sprinkle in the lemon zest and mix ingredients well so all the cauliflower is coated
- place cauliflower on skewers or on cookie sheet
- sprinkle with a few generous pinches of salt
- place in oven to roast for 25 minutes or until cauliflower is soft and caramelized in spots (turn a couple of times during roasting)
- alternative: place on grill or stovetop for 15-20 minutes following same instruction
- serve on skewers or with toothpicks
- enjoy!
