Banana Muffins |  Vegetable/Fruit Day

Who doesn’t love a muffin? On its own or topped with fruit, it’s a tasty treat that’s sure to please. This recipe is brought to you by member Acc(u)Stacey.

Makes 2 servings - uses 1 cup of your daily fruit allowance

Ingredients
  • 1 over ripe banana
  • 1/4 cup plantain flour
  • 1/4 cup unsweetened cinnamon applesauce
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon or pumpkin spice
  • 1 tsp egg replacer
  • Two sprays of coconut oil spray
  • 1/4 cup Lakanto or other zero-calorie brown sugar
  • Optional, top with fruit. Make sure to count this toward your daily fruit allowance.
Directions
  • Preheat oven to 400°F.
  • Mash banana until partly gooey and chunky.
  • Add remaining ingredients and mix with a fork until all blended.
  • Line a ceramic muffin tray or spray with zero-calorie cooking spray.
  • Pour mixed ingredients into the muffin tray.
  • Place in oven and bake for 20 - 30 minutes.
  • To check if they’re done, poke with a fork and see if it comes out clean.
  • Optional, top with fruit.
  • Enjoy!
