Pasta with garlic, oil and broccoli | Vegetable/Fruit Day
Makes 2 servings - each serving is 10 oz of daily vegetable allowance.
Ingredients
- 1 can Palmini noodles (may substitute with other brands)
- 1 medium head of broccoli
- 5-6 cloves garlic
- 1 TBSP olive oil
- Salt
- Crushed red pepper (optional)
- Vegetable stock or broth
- FlavorGod cheese flavor seasoning (optional)
Directions
- Drain and wash Palmini noodles.
- Cut broccoli florets off main stem and into bite-size pieces.
- Cut garlic cloves into thin slices.
- Pre-heat the pan.
- When very hot, pour in a small amount of vegetable broth (in lieu of cooking oil).
- Add broccoli, garlic, a pinch of salt and crushed pepper to taste.
- Cook until broccoli is bright green and garlic is starting to brown, adding vegetable broth, as needed, to prevent burning.
- When garlic starts to brown, add Palmini noodles and olive oil.
- Stir gently so ingredients are combined and until noodles are hot.
- Remove from heat to serve.
- Optional, sprinkle with FlavorGod cheese flavor.
