Apple pumpkin soup with tumeric |  Vegetable/Fruit Day

Makes 4 servings - each serving uses 8 oz of your daily vegetable allowance and ½ cup of your daily fruit allowance

Ingredients
  • 2 cups red onions, diced
  • 4 garlic cloves, minced
  • 1 cup of carrots, diced
  • 2 cups of apples, peeled, cored and diced
  • 2 cups of fresh diced pumpkin
  • 3 cups water
  • 1 TBSP ground turmeric
  • salt and pepper to taste
  • 2 tsp fresh coconut shavings
  • fresh basil, chopped, for garnishing
  • coconut zero calorie cooking spray
Directions
  • spray coconut zero calorie cooking spray in a large skillet over medium heat
  • sauté the onions and garlic for 3 minutes until the onions are translucent and the garlic is fragrant
  • add the chopped carrots, pumkin and apples and sauté for 5 minutes
  • add water and turmeric
  • bring the soup to a boil, then turn the heat down to low, simmer for 30 minutes until the apples and carrots are soft
  • remove from heat and let it cool before processing in a blender
  • add salt and pepper to taste
  • divide the soup between 4 bowls and sprinkle with coconut shavings and fresh chopped basil
  • you can freeze the soup for future use.
